The holidays can get so busy. There’s always  something to do or somewhere to be. So a simple holiday recipe is always welcome, in my opinion!

My friend Casey provided today’s contribution to the Christmas Calendar. She chose this particular cookie recipe because they can be made in multiple places and climates. She’s made them in the states as well as Thailand – and they were great in both places. A recipe that is easily adaptable, regardless of geography or temperature, is a winner for me!

And not only are these cookies super-easy to make, but they are also sure to be popular at any event you attend!

From Casey: I was able to make these in Thailand as well, so it is something that continued to be a part of our tradition even while living there. I do the super-easy cheater version that uses oreos for the cookie part, but you can also make a chocolate shortbread type cookie for the middle. There are only three ingredients: Oreos, chocolate chips, and peppermint extract.

Instructions
  1. Pull the sandwich cookies apart and scrape all of the white cream middle off of the oreo cookies.
  2. Melt your chocolate and mix in the peppermint extract.
  3. Dip the cookies into the chocolate and put them on a wax paper covered cookie sheet.
  4. Refrigerate them for about 15-20 minutes or until the chocolate sets.
